Lemon Thyme Chicken and Potatoes

I found a recipe here and modified it quite a bit to my tastes- & to simplify it.  I LOVED this dinner.  everyone in my family had seconds.  The chicken was so tender & it was all so flavorful!




2-4 chicken breasts, halved
all-purpose flour for dusting
salt and freshly ground pepper
1 tablespoon butter
1 tablespoon olive oil
3 minced garlic cloves
1 1/2 c. chicken stock
zest and juice from1 lemon
4 thyme springs, or 1 tsp dry thyme
2 bay leaves
6 potatoes cut into wedges


Directions:
Preheat the oven to 350°F. Season the chicken with salt and pepper and dust with flour. In a large ovenproof skillet, melt the butter in the oil. Add the chicken and cook over high heat, turning once, until browned (12 to 14 minutes).
 

Add the garlic to the skillet and cook over low heat until softened, about 5 minutes. Add the broth, lemon juice & herbs. Boil over high heat until reduced by half, about 5 minutes. Add the potatoes. Transfer the skillet to the oven, cook for 35-45 minutes, until the meat and potatoes are tender. At about the half-way point, stir to coat the potatoes with the sauce.
