I really like granola. I also really like chocolate- sometimes I eat it for breakfast (without letting my kids see, of course). So, this recipe is the perfect combination. It is a healthy chocolate granola- letting me eat chocolate for breakfast without the guilt. I don't even have to sneak it! It is really good plain, as a snack, or on top of yogurt. It isn't terribly sweet, don't worry!

Cocoa Granola
3 c. oats
1 c. puffed rice cereal
1 c. chopped nuts- I used almonds
1/2 c. ground flax seed
1/4 c. cocoa powder
1/4 c. olive or coconut oil
3/4 c. honey
1 tsp vanilla
dash of salt
Mix the oats, cocoa, cereal, flax and nuts together. Combine the wet ingredients in another bowl and pour over the dry ingredients. Pour into a cookie sheet and bake at 225 for a few hours (about 2)- stir every half hour- until crispy. Cool & store.
