Light Lasagna Soup


Don't you love lasagna?  Sometimes I want it, but want something little lighter.  This soup has all the flavors of lasagna, but is a much lighter and healthier meal. 



1 lb Italian turkey sausage or lean ground beef
1 onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
32 oz. chicken broth
1 (15 oz) can tomato sauce
1 can diced tomatoes
1/2 tsp. salt
4 oz. noodles- rotini, or broken lasagna noodles
1/2 c. chopped fresh basil
1/4 c. fresh chopped oregano
Parmesan cheese

Cook together the meat, peppers, onions, and garlic.  If you are using a very learn meat, add a few tsp of olive oil.  Cook until the meat is browned. 

Add the broth, tomato sauce, tomatoes, and seasonings.  Bring to a boil.  Reduce to a simmer and cook together about 20 minutes.  Add the noodles and boil until they are tender. 

Serve with a little Parmesan cheese sprinkled in each bowl.

What a nice and comforting twist on a baked lasagna. A great idea to avoid using the oven during this heat!
