This delicious recipe was on our menu last night. It was delicious! I got it from All You magazine, that's where the photo is from as well. I changed it a bit, though, as always... This is one of those recipes where you throw a little of this & a little of that in. We have tons of fresh herbs and vegetables growing in our garden right now and wanted to use some of them. You could use any vegetables that you have on hand. In the original recipe they used eggplant & mushrooms & bell peppers as well. You really can't go wrong.
1 sweet potato
Juice & zest from 2 lemons
chopped fresh herbs- I used oregano, lemon thyme, & rosemary
4 cloves minced garlic
Chop all the vegetables and tossed them in a big bowl with all of the ingredients. Let them sit and marinate for about a half hour. Heat up the grill to medium. I have a grill basket that I use to grill my vegetables. If you don't have one, leave the vegetables in larger pieces and place onto an oiled grill. Cook for about 20 minutes- until all the vegetables are tender. Turn or stir half way through.
Don't have a grill? These are incredible roasted as well. I have done them in my oven at 400 degrees for about a half hour.
I love food! I love a great, simple recipe. I have a passion for all things food. I love healthy, tasty recipes, as well as sugary treats. I graduated in Home Economics Education & taught high school foods classes for a few years. Now, I just like to cook & create for my family. I created this blog to share my love with others. I think a great recipe is meant to be shared. I hope you enjoy some of my favorites. Question or comment? Send me a note: email@example.com
