Citrus-Herb Grilled Vegetables

This delicious recipe was on our menu last night.  It was delicious!  I got it from All You magazine, that's where the photo is from as well.  I changed it a bit, though, as always... This is one of those recipes where you throw a little of this & a little of that in.  We have tons of fresh herbs and vegetables growing in our garden right now and wanted to use some of them. You could use any vegetables that you have on hand.  In the original recipe they used eggplant & mushrooms & bell peppers as well.  You really can't go wrong. 




Zucchini
Summer squash
1 onion
1 sweet potato
Green beans
Carrots
Olive oil
Juice & zest from 2 lemons
chopped fresh herbs- I used oregano, lemon thyme, & rosemary
4 cloves minced garlic
salt
pepper

Chop all the vegetables and tossed them in a big bowl with all of the ingredients. Let them sit and marinate for about a half hour.   Heat up the grill to medium.  I have a grill basket that I use to grill my vegetables.  If you don't have one, leave the vegetables in larger pieces and place onto an oiled grill.  Cook for about 20 minutes- until all the vegetables are tender. Turn or stir half way through.

Don't have a grill?  These are incredible roasted as well.  I have done them in my oven at 400 degrees for about a half hour.

Stopping by from the blog hop and now a new follower of your blog thru GFC. Gosh, all the food looks so amazing and good. I can cook but not where it looks like it came out of a restaurant.
