Mini Honey-Raspberry Baked Oatmeal Cups

I love baked oatmeal- it is something I have just discovered in the past few months.  I have been making all kinds of different baked oatmeal in the morning.  My kids think it is funny how often I make it.  Well, yesterday I came across these little mini baked oatmeal cups on this blog.    I was excited to try them out.  I modified it a bit- but the result was perfect.  We LOVED them. MY little one year old was literally hanging on my leg and yelling at me for more as I fed it to him.  I will definitely be making these again.

They are really quick and easy to put together.  They are a really healthy breakfast & would be great to make ahead for a quick breakfast another day.

1 c. oats
2 Tbsp honey
1/2 c. applesauce (unsweetened)
1/2 c. milk
1/2 c. raspberries
1/2 tsp vanilla extract

Combine all ingredients in a mixing bowl.  Preheat oven to 375 degrees.  Spray a mini-muffin tin with cooking spray.  Fill to the top with mixture.  Bake for 20 minutes @ 375.  Made 18 mini-muffin "cakes".
